Service description
Underperforming hotel restaurants and bars are among the most common profit drains in the industry. We assess your F&B concept, menu, pricing, staffing model, and guest capture rate, then recommend targeted changes that improve both profitability and guest satisfaction.
- 01
Who this review is for
This engagement is designed for hotel owners and operators who sense their restaurant, bar, or broader F&B programme is not pulling its weight — but lack the internal data or independent perspective to pinpoint why. It is equally relevant for properties preparing for a repositioning, a management change, or a capital investment in their outlets.
We work with full-service hotels, select-service properties with a single breakfast operation, and everything in between. The scope is calibrated to your situation, so a hotel with one breakfast service receives the same rigour of analysis as a property running multiple outlets — just applied at the right scale.
- 02
What the review covers
The engagement examines six interconnected areas: F&B revenue and cost analysis including food cost, labour cost, and covers; menu engineering and pricing; concept and positioning relative to your local competitive set; guest capture rate across hotel guests and walk-in traffic; and your service flow and staffing model. Each area is assessed on its own terms and in relation to the others.
The output is a prioritised set of improvement recommendations, each accompanied by a financial impact estimate. You receive a clear picture of which changes will move the needle most, so your team can act with confidence rather than guesswork.
- 03
How the engagement works, step by step
The process runs over four to five weeks. It begins with a structured data-blk6c phase: we collect financial records, menu documentation, staffing schedules, and any existing guest feedback. We then conduct on-site observation of service flow and a detailed review of your concept relative to the local market in the Niagara corridor.
From that foundation we build the analysis — menu engineering, cost benchmarking, capture rate modelling — before developing recommendations. The engagement closes with a presentation of findings to your leadership team, including a prioritised action plan your F&B manager and chef can begin implementing immediately.
- 04
Working with your existing team
This review is not an audit designed to expose individuals. We work directly alongside your chef, F&B manager, and front-of-house leads, treating them as the operational experts they are. Our role is to bring external data, structured frameworks, and an independent perspective that internal teams rarely have the time or distance to apply to themselves.
The result is a team that leaves the engagement better equipped — with clearer data, a sharper strategic framework, and specific recommendations they helped shape. Sustainable improvement depends on the people already in the building, and we design every engagement with that in mind.
- 05
Channelling revenue back into the operation
Hotel F&B is one of the few areas where revenue leakage and cost inefficiency compound each other simultaneously. A menu priced without engineering discipline loses margin on every cover. A staffing model misaligned with actual demand inflates labour cost without improving service. A concept that fails to capture hotel guests leaves the most accessible revenue on the table.
Our analysis is built to surface exactly these compounding effects — not as abstract observations, but as specific, quantified opportunities. The recommendations we deliver are grounded in what senior operators have actually implemented in comparable properties, not in theoretical best practice.
- 06
Scope options and how pricing works
The review is structured at three scope levels: a single-outlet review, a two-outlet review covering a combination such as a restaurant and a bar, and a full F&B programme engagement for properties with three or more outlets. The first two levels carry fixed starting prices; the third is scoped individually based on complexity. Current pricing is listed on this page.
Menu engineering recommendations are included in every scope level. Full menu redesign and recipe development are available as a separate add-on. We take on a limited number of engagements at a time, which means the senior consultant leading your review remains directly involved from the first data request to the final presentation.

How an engagement works
- 1
Discovery Call
We begin with a confidential conversation to understand your property's situation, goals, and constraints. This call helps us determine whether there is a good fit and what scope of engagement makes sense.
- 2
Scope & Proposal
We prepare a written proposal outlining the engagement scope, methodology, timeline, and fee. For complex situations, we may recommend a standalone diagnostic before committing to a full engagement.
- 3
Data Collection & Audit
We gather and analyse your property's performance data, conduct on-site visits or mystery-guest stays as appropriate, and complete structured interviews with key department heads.
- 4
Analysis & Recommendations
We synthesise findings into a prioritised action plan with realistic impact estimates. Recommendations are reviewed internally for feasibility before being presented to your team.
- 5
Debrief & Handover
We present findings and recommendations in a structured debrief session with ownership and department heads, answer questions, and agree on next steps. All materials are handed over in editable formats.

Frequently asked questions
Do you work with our existing chef and F&B manager?
Yes. We work collaboratively with your existing team. The review is not about replacing people — it is about giving your team the data and strategic framework to make better decisions.
Can you help redesign the menu?
Menu engineering is included in the review. We provide specific recommendations on item mix, pricing, and presentation. Full menu redesign and recipe development are available as a separate add-on service.
Is this relevant for a hotel with only a breakfast service?
Yes. Even a breakfast-only operation has meaningful opportunities to improve guest capture rates, reduce food cost, and enhance the guest experience. We scale the review scope accordingly.
